Massaman curry is a special Thai curry known for its unique combination of Thai flavors with Middle Eastern and Indian spices. It is one of the Thai dishes widely recognized by foreigners and has been praised as one of the world’s most delicious foods. This dish mostly uses chicken slowly simmered in a rich coconut curry sauce until tender, with a deep and delicate aroma of spices.

The main ingredients of Massaman chicken curry include:

  • Chicken (drumsticks or chicken thighs)
  • Coconut milk
  • Massaman curry paste
  • Potatoes
  • Onions
  • Roasted peanuts
  • Fish sauce
  • Palm sugar
  • Tamarind paste

Massaman curry paste is usually made from dried chilies, lemongrass, galangal, garlic, shallots, shrimp paste, and spices such as cinnamon, cloves, cardamom, coriander seeds, and cumin. These ingredients give the curry its rich and distinctive aroma.

Massaman is milder and gentler in flavor than many Thai curries. It has slight sweetness, Well-balanced saltines, mild sourness from tamarind, smooth richness from coconut milk, deep spice aroma, and very little or almost no spiciness at all.

Because of this, it is an easy dish to enjoy even for people who do not eat spicy food.

Simple cooking method:

Simmer the thick coconut cream until the oil separates.

Add Massaman curry paste and stir-fry until fragrant.

Add the chicken and cook until the surface firms up.

Pour in the remaining coconut milk or a little water.

Add potatoes, onions, and roasted peanuts.

Season with fish sauce, palm sugar, and tamarind paste.

Simmer until the chicken becomes tender, the potatoes are cooked, and the sauce thickens beautifully.

The charm of Massaman chicken curry is that it is not a fiery Thai curry, but rather one that is deep, gentle, and elegantly aromatic. It feels like a dish that tells the story of trade routes and cultural exchange through every spoonful.
